Over 27 years Nashoba Brook Bakery has grown from a few hundred loaves a day to more than 10,000 — but the process has never changed. No commercial yeast. No shortcuts. Just flour, water, wild culture, and time.

Our wild yeast starter was born from Concord grapes growing along the banks of the Nashoba Brook. Every loaf carries that local wildness in its crumb. The fermentation takes nearly 24 hours — not because we have to, but because it's the only way to make bread worth eating. That long rise breaks down complex carbohydrates, unlocks nutrients locked in the wheat, and creates a depth of flavor that no commercial yeast can come close to replicating.
